Around this time of the year, all the fresh crop Central American coffees start to trickle in, which keeps us buzzing with excitement.  We are happy to share one of our first Central American coffees of the year, Los Gigantes from the Chimaltenango region of Guatemala.

Like most coffee growing countries, coffee is paramount to the Guatemalan economy, producing 3,130,000 69kg bags annually. Like Colombia and Ethiopia, Guatamala has an incredible biodiversity that results in a wide range of distinct cup profiles. This makes Guatemala an incredibly interesting place to buy and taste coffees from, and we are very happy with the distint flavor profile of Los Gigantes.

We bought this coffee through our friends at Red Fox, who specialize in coffees from off the radar growing regions. For them, Chimaltenango is truly special. The combination of high elevations, (1800-2000masl,) high quality varities, (Bourbon and Caturra,) nutrient rich soil with acidic pH, and easy accessibility for processing make coffees from this region truly complete through all aspects of growing/processing. Red Fox loves this region so much that it’s the only central American region in which they currently work.

Los Gigantes is the product of many smallholder farmers in northern part of this region. Many of these producers have less than 1 Hectare (about 2.5 acres.) It’s named after the colloquial term (“gigante”) for one of the varieties prevalent here, Typica, which demonstrates a characteristically long and curvy shape. These coffees are fully washed in tile-lined tanks, with a 15-19 hour soak, before being dried for 15-20 days on raised beds.

On the roasting side, we were met with a choice in the roast process: do we profile in a way that pushes forward the fruit flavors, or do we go for a more delicate, floral expression. We unanimously decided to go the floral route and are very happy with the resulting coffee. We hope you enjoy it as much as we do.
