Terrazas del Pisque is a very special offering from Ecuador, and a shining example of potential of this unique growing region.

The farmer, Arnaud Causse, is a tropical agronomist who spent the vast majority of his career studying coffee growing regions around the world before founding several coffee farms in Ecuador. This particular farm is the culmination of Arnaud’s work and this is the first year he has offered this coffee to the public, and we are lucky to have purchased all of it.

The farm sits at 2200 MASL, on an arid and steeply sloped plot of nutrient-dense volcanic soil. In order to maximize this terroir, Arnaud has created a fully biodynamic growing environment designed specifically to bring out the best flavor possible.

Arnaud planted several varieties: Java, Pacamara, Bourbon and Caturra - each of which provide a unique perspective on the terroir.

Amongst the coffee shrubs, Arnaud also oplanted fig trees to provide shade and protection for the coffee as well as specific herbs as ground cover. These herbs act as natural pesticides and are also utilized by Arnaud to as a bio fertilizer.  Once all the trees and herbs were planted, birds and bees began to habitate to the farm and became a vital part of the ecosystem here.

Arnaud also controls the growing season by managing a strict irrigation schedule, meaning that at any given point this coffee is flowering, fruit is ripening, and cherries are being picked and prepped.

Once harvested, all the fruit pulp is removed and coffee undergoes an 18hr dry ferment — which Arnaud believes adds to the sensory precursors of the coffee — before being fully washed and dried on ventilated drying beds, perfectly prepared for export.

Terrazas del Pisque is a direct expression of Arnaud’s belief that coffee farming needs to have aholistic approach in order for the industry to continue. Not only does this approach create incredibly tasty coffee, but the additional investment and adaptation plays a critical role in creating sustainable farming practices that can continue to drive the industry forward. This ecosystem produces an incredible expression of the flavors of Ecuador.
