CUPPING NOTES: Dark fruit layered with subtle florals and stone-fruit acidity.

Washing stations are an incredibly important part of coffee ecosystem in Ethiopia, where farms are small and farmers have limited access to processing equipment. To provide opportunity for small holder farmers to steward the quality of their crop, high quality washing stations are placed throughout the growing regions. To put this in perspective, a few of our other Ethiopian offerings, Yukro, Duromina and Nano Challa are all names of other washing stations throughout Ethiopia, and our newest 03 offering, Layo Teraga is another example of this system.

Located in Uraga Woreda, in the Guji zone of Oromia, Ethiopia, the Layo Teraga washing station is known for its consistency and quality, which are a result of a state-of-the-art equipment, meticulous separation and detailed drying practices. Each of the 500 members bring bags full of fresh picked cherries of varying of size and quality to be processed and sold. It is the job of the mill to make sure the outgoing lots are made up of consistent quality to bring the best price back to the members. This requires intense attention to detail and adaptability from crop-to-crop. The resulting coffee is exemplary of the region – ultimately the combination of terroir, native heirloom varieties, generationally informed growing practices – all of which are highlighted by this intensively focused processing.

Layo Teraga was one of the first coffees brought in by our import partner Red Fox, who purchases this coffee every year. According to them, this year’s harvest is the best tasting crop they’ve ever imported.

Coffees from this region are generally known for complex florals, clean citrusy acidity and soft sweetness – a flavor profile which is respected and revered throughout the specialty coffee world. But this year’s

Layo Teraga crop presents all of these qualities and more, with an additional depth and a dark-fruit-like sweetness, which we highlight with the roast profile. The resulting flavor profile reminds us of dark fruit layered with subtle florals and stone-fruit acidity.
