CUPPING NOTES: Sweet, clean and complex; this has always been the target we aim for when building our 01 blend. 

SWEET is related to cultivation and process, and is activated by the roast process. Though many elements may contribute to sweetness in the cup, “sweet†coffees are generally the result of slow, careful and intentional cultivation, and are rarely accidental.

CLEAN is a byproduct of high quality farming practices and milling. Clean coffees are high quality, in-season, and lacking any processing or cultivation defects - allowing the clearest window into the flavor profile of the coffee.

COMPLEX describes the interplay between different flavors, offering balanced pronunciation of sweetness, multi-dimensional acidity, and both bitter and botanical elements to add dimension. The more intensity and interplay between these attributes, the higher the quality. 

Together, these three attributes guide the process of building our 01 blend;  as we set to launch a new iteration, we wanted to provide a bit of insight into the build process for this new release, and how each of these coffees not only demonstrate these qualities, but work together to enhance the overall flavor experience.​​​​​

40% El Borbollon, El Salvador

El Borbollon is a shining example of high quality at scale, which is why it is a mainstay in our annual offering list. Founded and managed for 4 generations by the Alvarez Family, El Borbollon is both a farm and wet mill responsible for over 1.5 million kg of coffee per year. This lot is composed of 100% Red Bourbon from the El Borbollon farm, and  has a classically sweet profile with flavors reminiscent of dark chocolate and milling spice, which provide the perfect base for our blend.

40% El Diamante, Colombia

Hailing from Pacora, Caldas in the widely known “coffee triangle†of Colombia, Ruben Dario Cardona Alzate tends to 18,000 trees at his farm called El Diamante. Sitting at 1900 masl, this farm represents everything you would expect from a Colombian coffee: an emphatic, sparkling, and juicy white grape acidity, paired with soft, sweet milk chocolate notes and a smooth, rich mouthfeel. Typically, you wouldn’t blend a coffee with such pronounced complexity, but we thought it added integral balance to the El Borbollon, particularly in the form of those high-end, vibrant and juicy flavors.

20% Segua, Honduras

In the hillsides near San Juan, Intibucá, Fredy Amílcar Cantarero and his wife, Doris, co-manage a 10.5 hectare farm called Segua. Doris mainly oversees the administrative responsibilities and the estate in the mornings, while Fredy, who works as a teacher during the day, manages the farm in the afternoons. Working with BECAMO, one of our mainstay exporters in Honduras, Fredy and Doris have been able to focus on quality, while exploring new and different varieties. The resulting coffee demonstrates a dynamic flavor profile with a balanced, subtle acidity, great depth, and a likeness to red currant, bakers chocolate and apricot.

These three distinct coffees work together to add and intensify complexity, while maintaining balance. The El Borbollon is a wonderful anchor with deep, low-end flavors and chocolatey richness. El Diamante soars atop this profile with a sparkling acidity, and Segua acts as a conduit, presenting subtle acidity and depth that ties all three coffees together.

We are proud to continue the tradition of offering a wonderfully round, well balanced, and approachable espresso blend that is a stunning example of what we look for in espresso flavors: Clean, Sweet, and Complex.
